Ouzo/sambucca Type Recipe Idea Please.

Post by StillBrewing »

Evening all.
Wondering whether you could help me out please. Looking to create an ouzo/sambucca type drink through the Airstill and would appreciate your thoughts on botanical quantities.

Will be using the sputnik and just planning to make a litre of it to start with. I've got Star Anise, Aniseeds and Liquorice Root power. Looking for a good punchy flavour hit which comes through once its back sweetened a little.

Cheers

It will work well in the airstill - perhaps even with the sputnik, but you don't need to run it at 100w.

I am going to try this.
Infuse the following...
50g star anise
2 table spoons of dried fennel seeds
1 litre 40%+ neutral to infuse for 4 days.

Spirit run....
Add the infusion to the airstill, with 1 litre of water.
This will make 700ml.
Add sugar to taste. This will have a smoothing and sweetening effect. Original recipe was 5 teaspoons.

Uplifted and reworked from the archive. Thanks go to Blue_Duck for the original.

Note. This will work with neutral much less that 93%. Use what you have.

You can digest this in the morning,

Using an Airstill, bots in a copper basket.

As neutral as you can, no more than 30%Abv.

50g star anise,
10g liquorice.
5g dried lemon rind/20g fresh peeled.

Tastes like the pink and blue liquorice Allsorts.

Yummy.

Nice with an ice cube.

Or with tonic and a wedge of lime.

Its not bad at all for a first attempt. Added a litre of 45% neutral to the boiler, along with a litre of spring water. Stuck the Sputnick in and the bots in the basket were 30g Star Anise, 15g Aniseeds, 10g Liquorice Root Powder and 5g of Fennel.

Ran it to 40% on the parrot and proofed down to 40%, with the addition of 40g of dissolved sugar to sweeten.

Its alright, loads of taste and its a good starting point. No doubt I will be making plenty more of this and refining the recipe as I go.

Aye, we are likely all addicted. Too late to change, too little viable comprehension to notice.

Don't panic. It won't hurt.

Having ost my 'sweet-tooth/ 15 - 20 years ago, not sure how to respond to this.

It sounds interesting, but the blue liquorice Allsorts referencce turns me off.
Liqour type drinks have to be top notch to interest me these days.
And really only my sloe gin currently floats my boat.
Now, a good Port recipe might get me excited.

Just spotted the "liqueur" bit, but it made me wonder whether it stays clear when made but goes cloudy once a mixer is added like french anise, ouzo, raki, etc do.......
